Hilton Molino Stucky Venice Unveils a New Menu for Aromi Restaurant

Canal-side Fine Dining Restaurant Opens just in Time for Pasqua

April 2025…// Hilton Molino Stucky Venice, the iconic Venetian hotel and former flour mill on Giudecca island, is delighted to announce the reopening of its much-loved Aromi restaurant for the 2025 season, with a brand new menu by Executive Chef Ivan Fargnoli.

Enjoying a peaceful canal-side location with a summer terrace and spectacular city views within the grounds of the hotel, Aromi is an intimate and elegant restaurant with a range of sumptuous signature dishes. Drawing inspiration from seasonal produce and creating a gastronomic experience to delight the senses using unusual combinations of flavours as well as Chef Ivan’s extensive international experience, this season’s menu is an alluring blend of the finest Italian ingredients and oriental spices. Inviting diners to indulge in an unparalleled gastronomic experience, harmonised with curated wine pairings, each dish on the menu sees a chef’s tale unfold on the plate.

The signature dishes on the new menu have been personally created by Chef Ivan and are a true labour of love honed over many months. Stand out dishes include a striking Fassona Tartare, Turnip and Karashi Mustard, Marrow and Whiskey starter that looks almost too good to eat, and Spaghetti with Cuttlefish Ink, Yuzu Kosho Bisque and Sea Urchins. Sure to surprise and delight sweet-toothed diners, Popcorn English Cream, Burnt Milk Panna Cotta, Corn Caramel and Popcorn Gelato provides the ultimate dessert to complete the feast.

Describing his signature dish of Roasted Glacier 51 codfish fillet with chorizo powder, zucchini carpaccio, spinach, bouillabaisse and chorizo sauce, Chef Ivan said, “The flavour combination in this dish is sure to surprise. We have used the sweetest of spinach from Japan to balance the flavours of spicy chorizo sausage with succulent codfish and a carpaccio of zucchini marinated in anchovies, capers and lemons. This dish is a true culinary experience for all the senses!”

Additional signature dishes include deliciously light Thai-marinated salmon with a fragrant sauce and salmon caviar, while vegetarian offerings such as Aubergine Parmigiana and Artichoke Risotto with Cynar provide a flavour sensation for every diner.

For those visiting the city of canals over Easter, Hilton Molino Stucky Venice will host an eccelente line up for the whole family. From Pasqua feasts featuring authentic Venetian fare to spa treatments and a festive new afternoon tea, this waterside retreat provides the ultimate Easter escape. New for 2025, the hotel will also host a special Easter treasure hunt for the youngest of travellers.

Bacaromi, the hotel’s laid-back Venetian family-style eatery popular with guests and locals alike, will host a special feast with all the trimmings on Easter Sunday. When it comes to dessert, it wouldn’t be Easter in Italy without a slice of Hilton Molino Stucky Venice’s homemade Easter Dove cake – served with an inviting accompaniment of special sauces – naturalmente! As well as at Bacaromi, the sweet treat will be available all day long at Rialto Bar & Restaurant for those wishing for an extra fix.

Over at Skyline, the hotel’s rooftop bar – the highest in all of Venice – guests can indulge in a spoiling themed afternoon tea complete with sweet and savoury treats, teas, coffee and Easter themed cocktails. Priced at 60 euros per couple, sweet treats include hazelnut profiteroles and mini Neapolitan pastiera while savoury snacks include focaccia, ham and cucumber sandwiches and smoked salmon, mango and basil brioche buns.

For those who prefer their Easter indulgence in liquid form, Skyline’s talented team of expert mixologists will serve up a duo of limited-edition cocktails on Easter weekend – Time Bunny, a playful blend of rabbit bitter, thyme syrup, super grapefruit juice and citrus and Hopping Guava, a voyage through an exotic spring garden blending Havana, guava syrup, sesame milk and sesame biscuit.

Ideal for those looking to detox over Easter weekend, eforea Spa will offer two special treatments for guests. Spa-lovers can choose from the 25-minute (110 euros) or 50-minute (185 euros) Pure Indulgence, a wildly romantic couples massage with chocolate candle and macadamia oil or Chocolate Blossom, an 80-minute (140 euros) body scrub, chocolate wrap, facial and scalp massage, followed by a full body massage with warm chocolate candle.

Formerly a flour mill factory on the peaceful island of Giudecca, Hilton Molino Stucky Venice is a modern Venetian masterpiece steeped in history.
